This is a light and refreshing salad featuring grapefruit amongst the normal salad leaves. It is topped off with an orange and lemon dressing.
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lemon juice
3 tablespoons olive oil
200g mixed salad greens
1 grapefruit, peeled and cut into bite size pieces
1 pinch black pepper to taste
- To prepare the dressing combine the juices in a bowl and slowly whisk in the olive oil in a thin stream.
- In a serving bowl toss the greens and the grapefruit with the dressing and sprinkle with freshly ground black pepper, to taste.
