Cheesy Potato Bake

    This is a great side dish to any meat but especially roast beef. It is also a good way to get some dairy into your diet.

    Serves: 6 

    • 1 clove garlic, halved
    • 1 kg potatoes, peeled and thinly sliced
    • 2 1/2 cups (625ml) thickened cream
    • 300g freshly grated cheddar cheese
    • 1 pinch salt and freshly ground black pepper, to taste

    Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

    1. Preheat the oven to 180 degrees C.
    2. Rub the bottom and sides of the baking dish with the cut side of the garlic. Spread a layer of potatoes then a layer of cream, then a layer of grated cheese, then salt and pepper in the baking dish.
    3. Continue with more layers until all ingredients are used ending with a layer of cream and cheese.
    4. Bake in the preheated oven for 1 hour.

    Classic recipe! Simple and pure flavors. I did have to increase the baking time to about 90 minutes, tenting the dish lightly with foil the last 30 minutes. The nice thing is, this needs to rest before serving so you can finish up the rest of the meal. I used a deep dish 8 x 8 pan. If you don't have one that size use a standard 9 x 9 pan. Comte cheese may be difficult to find, use Gruyère or another good melting cheese if Comte is not available. Remember to salt each layer of potatoes.
