Molten Chocolate Cake

A chocolate lover's dream these individual molten chocolate cakes are easy yet very impressive. Serve with a rich double cream.

Ingredients
Serves: 8 

  • 225g unsalted butter
  • 225g dark chocolate, diced
  • 5 eggs
  • 100g caster sugar
  • 1 pinch salt, to taste
  • 1 tablespoon flour

Directions

  1. Preheat the oven to 230 degrees C. Line a muffin tin with 8 large paper cases and butter the cases.
  2. Melt the butter and chocolate together in a double boiler; remove from heat.
  3. Using an electric mixer beat the eggs, sugar and salt until sugar dissolves. Beat the egg mixture into the chocolate mixture. Stir in flour until just combined.
  4. Spoon mixture into prepared cases. Bake in the preheated oven until cakes are puffed but not fully set; about 8 to 10 minutes. Carefully remove cakes from tin and serve immediately whilst warm.

Cook's tip

Alternatively, you can bake the cakes in 8 buttered ramekins.
