Molten Chocolate Cake

A chocolate lover's dream these individual molten chocolate cakes are easy yet very impressive. Serve with a rich double cream.
225g unsalted butter
225g dark chocolate, diced
100g caster sugar
1 pinch salt, to taste
1 tablespoon flour

- Preheat the oven to 230 degrees C. Line a muffin tin with 8 large paper cases and butter the cases.
- Melt the butter and chocolate together in a double boiler; remove from heat.
- Using an electric mixer beat the eggs, sugar and salt until sugar dissolves. Beat the egg mixture into the chocolate mixture. Stir in flour until just combined.
- Spoon mixture into prepared cases. Bake in the preheated oven until cakes are puffed but not fully set; about 8 to 10 minutes. Carefully remove cakes from tin and serve immediately whilst warm.
Alternatively, you can bake the cakes in 8 buttered ramekins.
