Molten Chocolate Cake

    A chocolate lover's dream these individual molten chocolate cakes are easy yet very impressive. Serve with a rich double cream.

    Ingredients
    Serves: 8 

    • 225g unsalted butter
    • 225g dark chocolate, diced
    • 5 eggs
    • 100g caster sugar
    • 1 pinch salt, to taste
    • 1 tablespoon flour

    Directions
    Preparation:20min  ›  Cook:10min  ›  Extra time:30min  ›  Ready in:1hour 

    1. Preheat the oven to 230 degrees C. Line a muffin tin with 8 large paper cases and butter the cases.
    2. Melt the butter and chocolate together in a double boiler; remove from heat.
    3. Using an electric mixer beat the eggs, sugar and salt until sugar dissolves. Beat the egg mixture into the chocolate mixture. Stir in flour until just combined.
    4. Spoon mixture into prepared cases. Bake in the preheated oven until cakes are puffed but not fully set; about 8 to 10 minutes. Carefully remove cakes from tin and serve immediately whilst warm.

    Cook's tip

    Alternatively, you can bake the cakes in 8 buttered ramekins.

    (Before reading on: I'm not the best baker ever. You've been warned!) These did not work out! I could tell at the stage of mixing the chocolate mix with the egg/sugar mixture that it wouldn't work. There was far too much egg in this. Because I read the other review I assumed the runniness would fix itself when cooking. But at the 8 minute mark they were sloshing in their cases because they were still so runny and at the 10 minute mark they just turned into scrambled egg with chocolate in it. I'd love to have another go at cooking this recipe! But I'm not too sure about the eggs. (Maybe I'll have a go at a more fool-proof recipe first) Thanks for sharing this recipe.     Just made these and they came out great! When i first made i thought it was too runny but it turned out fine. Super quick and easy and they are still great even when cold!  -  02 Dec 2013  (Review from Allrecipes UK & Ireland)
