    This gluten free bread is quick and easy as well as being full of fibre from the flax and almond. Great toasted with cheese.

    Ingredients
    Serves: 7 

    • 175g almond meal
    • 100g arrowroot powder
    • 4 tablespoons flax seed meal
    • 1/2 teaspoon sea salt
    • 1/2 teaspoon bicarb soda
    • 4 eggs
    • 1 teaspoon agave nectar
    • 1 teaspoon apple cider vinegar

    Directions
    Preparation:15min  ›  Cook:35min  ›  Ready in:50min 

    1. In a medium bowl combine almond flour, arrowroot, flax meal, salt and bicarb soda.
    2. In a larger bowl, blend eggs 3-5 minutes until frothy.
    3. Stir agave and vinegar into eggs.
    4. Mix dry ingredients into wet.
    5. Pour batter into a greased medium sized loaf tin.
    6. Bake at 180 degrees C for 30-35 minutes until a skewer inserted into centre of loaf comes out clean.
    7. Cool and serve.

    Just made this today. Turned out good, nice texture and taste, I added sunflower seeds too. I will try again soon and may look at doubling recipe to make higher. - 03 Jun 2012
