Toffee with Chocolate and Nuts
I have been making this toffee as a Christmas gift for years. Toffee base with a layer of chocolate then comes the nuts.
Ingredients
Serves: 10
- 180g nuts, chopped e.g. hazelnuts, almonds or pecans
- 200g sugar
- 260g butter
- 1 tablespoon golden syrup
- 60ml water or bourbon
- 175g chocolate, dark, milk or white, diced

- Spread chopped nuts on a baking tray and toast lightly being careful not to burn. Cool.
- Put sugar, butter, golden syrup and water into a saucepan and heat over medium heat stirring constantly. Cook until mixture is golden brown or about 150 degrees C on a sugar thermometer.
- Working quickly pour the mixture onto a baking tray and let it spread out. Top with chocolate and wait for a minute or so then spread out to cover toffee. Add nuts and lightly press into melted chocolate with a spoon. Leave to cool for several hours.
- When completely cool break into chunks, cover and store covered in an airtight container.

Twice as much fat as is needed. Creates a small amount of toffee in a bath of fat. We had to pour off the fat to salvage it. Compare it to any other recipe and you'll see! Avoid. - 10 Nov 2013 (Review from Allrecipes UK & Ireland)
