Ginger Golden Syrup Cake

    Ginger in this cake is subtle but noticeable. One of my favourite cakes to make when the in-laws are coming to visit.

    Serves: 1 

    • 2 eggs
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 1 tablespoon ground ginger
    • 90g caster sugar
    • 2 teaspoons golden syrup
    • 90g butter or margarine
    • 1 pinch salt, to taste

    Preparation:3min  ›  Cook:45min  ›  Ready in:48min 

    1. Preheat oven to 180 degrees C.
    2. Mix all the ingredients together and once the butter is soft, place in greased small square loaf tin.
    3. Place in middle of the preheated oven. Bake for about 45 minutes or until spongy to the touch. Leave to cool and gently turn out.

    It's probably my rubbish baking skills by I really didn't like this. It was dry and crumbly and didn't go all gooey after a couple of days. I didn't really enjoy making it either. Very sorry.  -  09 Mar 2012  (Review from Allrecipes UK & Ireland)
