Ginger Golden Syrup Cake
Ginger in this cake is subtle but noticeable. One of my favourite cakes to make when the in-laws are coming to visit.
Ingredients
Serves: 1
- 2 eggs
- 250g plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon bicarb soda
- 1 tablespoon ground ginger
- 90g caster sugar
- 2 teaspoons golden syrup
- 90g butter or margarine
- 1 pinch salt, to taste

Ready in:48min
- Preheat oven to 180 degrees C.
- Mix all the ingredients together and once the butter is soft, place in greased small square loaf tin.
- Place in middle of the preheated oven. Bake for about 45 minutes or until spongy to the touch. Leave to cool and gently turn out.
