Spicy Fajita Marinade

    This marinade is designed for fajitas but also acts well as a general spicy rub for meat or fish. Cumin, chilli and garlic are prominent in its flavour profile.

    Serves: 1 

    • 2 tablespoons paprika
    • 2 tablespoons dried oregano
    • 2 tablespoons cumin seeds
    • 1 pinch chilli flakes, to taste
    • 1 pinch salt, to taste
    • 2 garlic cloves, crushed
    • 1 dash lemon juice

    1. Add the paprika, oregano, cumin, cloves, chilli flakes and salt to a pestle and mortar or a blender. Process until a fine powder.
    2. Mix well with the garlic and lemon juice.
    3. Rub into meat.
