Easy Christmas Shortbread

    Making shortbread is very easy, just mix all the ingredients in a bowl and go! Use your favourite biscuit cutters to create Christmas shapes like trees and stars.

    Serves: 8 

    • 110g cornflour
    • 120g icing sugar
    • 230g unsalted butter, softened
    • 230g plain flour
    • caster sugar, for sprinkling

    1. Place the oven on 180 degrees C.
    2. Sprinkle some flour on a work top and roll out the ball to 1cm thickness. Cut out shapes with biscuit cutters.
    3. Place shortbread on a baking tray and bake 20-25 minutes or until just golden brown. Remove from the oven and sprinkle caster sugar on top.
    4. Combine all ingredients except the caster sugar in a bowl and rub with your fingers until it resembles breadcrumbs. At this point start squeezing the dough together, it should form a dough ball with no crumbs left in the bowl.
