Bacon and Egg Salad

    Bacon and egg is one of my favourite combinations so why not take it to a salad? This is a simple salad that goes well with everything but especially a BBQ.

    Serves: 4 

    • 150g bacon
    • 1 lettuce, shredded
    • 3 spring onions, diced
    • 1 garlic clove, crushed
    • 2 tomatoes, cut into wedges
    • 4 hard boiled eggs, quartered
    • 4 tablespoons French dressing

    Preparation:30min  ›  Cook:10min  ›  Ready in:40min 

    1. Fry the bacon until it is crisp. Drain on paper towel and dice.
    2. Add half the bacon pieces to a salad bowl with the lettuce, spring onions, garlic, tomatoes and eggs.
    3. Pour over the dressing and toss well to coat. Garnish with the remaining bacon pieces. Serve with chips or potato wedges.
