Sausage, Mushroom and Capsicum Casserole

Sausage casserole is such a great family dinner and extremely cheap. This version is boosted with mushrooms and capsicums. Serve with mashed potato.


Serves: 4 

  • 8 pork sausages
  • 1 cooking onion, diced
  • 1 red capsicum, diced
  • 130g mushrooms, sliced
  • 30g butter
  • 30g plain flour
  • 150ml milk
  • 300ml pork stock
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chilli powder, to taste
  • 1/2 teaspoon basil
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon oregano
  • 1 tablespoon sugar
  • 1 tablespoon tomato paste
  • 1 apple, optional

  1. Lightly brown sausages and cut each sausage into 3 pieces and place in a casserole dish then add the onions, capsicum and mushrooms.
  2. Melt butter in a saucepan over a low/medium heat. Keeping on a low/medium heat, stir the flour into the butter to make a smooth paste then stir in the milk. Keep stirring until the paste/flour is absorbed.
  3. Add tomato paste and stir in. Add the herbs, spices and sugar; stirring constantly. Heat gently for 2-3 minutes; then stir in the stock.
  4. Once sauce is blended pour into the casserole dish. Stir to ensure all of the ingredients are covered.
  5. Cook in a preheated oven at 180 degrees C for 1 hour to 1 hour 15 minutes. If adding the apple, core and dice the apple then add for the last 20 minutes of cooking.

This was awesome, I used fennel instead of Capsicum and also added some celery stalks chopped and added Garlic with the Onion. Easy to make and the sauce is sooo nice. - 06 May 2014
