Baked Beans are taken to a new level when combined with sausage, chorizo and capsicum in this family casserole.


Serves: 3 

  • 5 sausages
  • 15cm length chorizo sausage
  • 3 cloves garlic, diced
  • 1 red or green capsicum, diced
  • 1 (400g) tin baked beans
  • 1 teaspoons of tomato paste
  • 1 teaspoons of paprika
  • 1 pinch salt and pepper, to taste
  • 1 sprig parsley or coriander, to garnish

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Cook the sausages and chorizo the set aside to cool. Slice into rounds.
  2. Fry garlic for 1-2 minutes over a low heat and then add in the sliced chorizo and capsicum; continuing to cook for 5 minutes or until capsicum begins to soften.
  3. Add the cooked sausage, tin of beans, tomato paste and paprika then simmer gently for about 5 minutes making sure not to let the beans turn mushy.
  4. Season to taste and garnish with fresh parsley or coriander.
  5. Serve immediately with baked potatoes, rice or crusty bread.
