Pizza Foundation

    This is the foundation for any pizza you can imagine. Add your favourite toppings. This is a good one to do with the kids; they love to put on their favourite toppings.

    Serves: 8 

    • 750g strong white bread flour
    • 1 pinch salt and pepper to taste
    • 2 teaspoons dried yeast
    • 2 teaspoons caster sugar
    • 500ml warm water
    • 400g tomato paste
    • 300g mozzarella cheese
    • 300g cheddar cheese
    • 1 pinch mixed herbs

    1. Place the flour, salt, pepper, yeast and sugar into a large mixing bowl.
    2. Slowly pour in the warm (not hot) water and mix to make a soft dough.
    3. Sprinkle the work surface with a little flour and knead the dough for about 10 minutes until it is smooth and elastic.
    4. Cut the dough into 8 and roll each into a rough circle about 18cm in diameter. Place them on baking trays lined with baking paper so they won't stick to the tray.
    5. Spread the pizzas with the tomato paste and sprinkle on the mozzarella and cheddar cheese along with any other toppings you like. Top with mixed dried herbs and leave to rise in a warm place for about 30 minutes.
    6. Preheat the oven to 220 degrees C.
    7. Bake the pizzas in the oven for about 15 to 20 minutes until the cheese is melted and the edges of the pizzas are golden.

    I have never made a pizza from scratch before and I thought this was an excellent recipe- I used this base with herbs, onions, red peppers and courgette and it was delicious! Far better and cheaper to produce than anything in the shops and very easy to make. Also, I like the fact there is no oil in this recipe- the dough is lovely and bready without being greasy.
