Vegetable and Pasta Bake

    My kids love this and it is so simple and full of healthy vegetables. Cook it before getting them from school and leave in the oven ready for their return.

    Serves: 4 

    • 1 red capsicum, finely diced
    • 1 zucchini, finely diced
    • 1 clove garlic, finely diced
    • 30ml olive oil
    • 1 (440g) tin diced tomatoes
    • 1 tablespoon tomato paste
    • 1 teaspoon dried mixed herbs
    • 20ml Worcester sauce
    • 250g wholewheat penne pasta
    • 80g mozzarella , grated
    • 80g cheddar cheese, grated

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Fry red capsicum, zucchini and garlic in olive oil until softened. Add tin tomatoes, tomato paste, mixed herbs and Worcester sauce.
    2. Cook pasta until al dente.
    3. Combine the pasta and vegetable mixture in a casserole dish. Sprinkle the mozzarella and cheddar cheese over the top.
    4. Cook in oven at 180 degrees C until cheese is browning and bubbling.
