Raspberry and Coconut Sorbet

Raspberry and coconut combine to create a wonderful simple and cold dessert. Best of all; you don't need an ice cream maker.


Serves: 5 

  • 3 1/2 cups frozen raspberries
  • 2 tablespoons desiccated coconut
  • 3 tablespoons caster sugar
  • 1 orange, juiced
  • 2 teaspoons lemon juice
  • 1 tablespoon grated chocolate

Preparation:15min  ›  Ready in:15min 

  1. Remove the raspberries out of the freezer for 20 minutes to soften slightly. If you have a good processor you probably can skip this step.
  2. Blend all of the ingredients together well in a food processor or blender.
  3. Spoon into individual portions in serving dish then decorate with a sprinkle of additional coconut.
  4. Serve immediately or freeze for 20 minutes if too soft.
