Fried Rice with Egg

    This is a basic fried rice that is high in protein due to the eggs. It is a simple base that you can add other ingredients to like mixed vegetables or bacon.

    Serves: 2 

    • 2 tablespoons oil
    • 2 cloves garlic, sliced
    • 1 carrot, cut into matchsticks
    • 4 spring onions, sliced
    • 1 large egg, whisked
    • 1 large bowl cooked or leftover rice
    • 2 tablespoons dark soy sauce

    1. Heat up the oil to a medium heat. Add garlic and fry until golden. Add the carrot to the garlic and fry for 3-4 minutes then add the spring onion. Fry for a further minute then add the egg and stir into the vegetables.
    2. When the egg is cooked add the cooked rice and combine with the vegetables and egg.
    3. Add the soy sauce to coat the rice and serve.

    A good base recipe. I added pork I had marinated in a soy sauce, honey and ginger mix - I did not add the soy sauce to the rice as it was already there with the meat. My 5 year old went back for seconds  -  15 Aug 2012


    Used different ingredients. Added sliced mushrooms, frozen garden peas, frozen sweetcorn, sauteed red pepper & a drizzle of toasted sesame oil. You can also add cubed Bacon grill & prawns for a more substantial main course.  -  20 Feb 2010  (Review from Allrecipes UK & Ireland)
