This is a basic fried rice that is high in protein due to the eggs. It is a simple base that you can add other ingredients to like mixed vegetables or bacon.
2 tablespoons oil
2 cloves garlic, sliced
1 carrot, cut into matchsticks
4 spring onions, sliced
1 large egg, whisked
1 large bowl cooked or leftover rice
2 tablespoons dark soy sauce

Heat up the oil to a medium heat. Add garlic and fry until golden. Add the carrot to the garlic and fry for 3-4 minutes then add the spring onion. Fry for a further minute then add the egg and stir into the vegetables.
When the egg is cooked add the cooked rice and combine with the vegetables and egg.
A good base recipe. I added pork I had marinated in a soy sauce, honey and ginger mix - I did not add the soy sauce to the rice as it was already there with the meat. My 5 year old went back for seconds - 15 Aug 2012
