Creamy Bacon Pasta

    This is an easy and quick dinner. Creamy pasta with bacon and chives. To make it less fattening you can use low fat cream and ham.

    Serves: 2 

    • 1 red onion, diced
    • 3 rashers of bacon, diced
    • 200g spiral pasta
    • 2 egg yolks
    • 100g Parmesan cheese, grated
    • 150ml thickened cream
    • 1 sprinkle of chives
    • 1 pinch salt and pepper, to taste

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Fry the onion and bacon for 10 minutes.
    2. In a saucepan boil the pasta; when the pasta is cooked drain and add to a mixing bowl.
    3. Add to the pasta the egg yolks, cheese and cream. Mix.
    4. Add bacon and onion from the frying pan then season with salt and pepper to taste. Sprinkle with the chives and serve.

    Yummo! Worked a treat! Very easy recipe and very filling. I used free range eggs which made it quite rich. Pantry was bare so had no red onion and only 30 grams of parmesan cheese so substituted with white onion and 60/40 gram tasty cheese grated finely and parmesan cheese respectively, instead - still tasted amazing.
