Coriander Dip

    This is like an Indian pesto using coriander and Indian spices. It can be served with pappadums as a dip or alongside your favourite curry as a condiment. For a variation exchange some of the coriander for mint.

    Serves: 4 

    • 200g fresh coriander leaves
    • 4 green chillies
    • 1 pinch caster sugar, to taste
    • 1 pinch ground cumin, to taste
    • 1 lemon, juiced
    • 1 pinch salt, to taste

    1. Place all ingredients in a blender or food processor. Blend thoroughly. Test flavour and add more salt if necessary.

    Lucky I bought dip today it looks nothing like the picture and is inedible. Yuck and what a waste of a ton of coriander. Added shoyu to try and give it liquid. Still didnt work.  -  04 Oct 2015
