This is a Dutch classic known as Boterkoek. Simple to prepare it is soft, almost cheesy in texture and has a rich butter taste.


Serves: 6 

  • 100g unsalted butter
  • 70g caster sugar
  • 1/2 teaspoon salt
  • 1 egg, whisked
  • 1 teaspoon grated lemon zest
  • 100g plain flour

  1. Put the butter in a large bowl and mix until the butter is easy to mold.
  2. Add caster sugar, salt, egg and lemon zest then mix.
  3. Add flour and gently mix it in with the other ingredients then form the dough into a ball.
  4. Preheat oven to 230 degrees C.
  5. Use a cake tin with a inside diameter of 13 to 16cm. Take the dough ball and gently press it down the cake tin with a flat hand.
  6. Brush a little egg on top and make a tartan motive using a fork.
  7. Put in the preheated oven and bake it for around 15 minutes until the surface has a golden colour.
  8. Cool it down for at least 1 hour.
