Mixed Fruit Cake

    Fruit cake without the hassle, I love making this. It doesn't take long and is packed with fruit. You can add vanilla essence or use different fruit, even add cherries.

    Serves: 12 

    • 375g self raising flour
    • 450g mixed fruit
    • 2 large or 3 small eggs, whisked
    • 230g melted butter
    • 200g sugar
    • little warm water if too stiff

    Preparation:10min  ›  Cook:1hour30min  ›  Ready in:1hour40min 

    1. Get large bowl and add butter and sugar. Put in microwave on defrost until completely melted; about 2-3 minutes.
    2. Add the flour and fruit then mix together.
    3. Put in a greased 900g bread tin. Cook on 180 degrees C for 90 minutes or until cooked. If it starts to brown on top you can cover last half hour with foil.

    Cake Top

    Keep a tablespoon of the mixture without the fruit and spread over the top before cooking. This helps make a better presenting top to the cake.
