This is a lovely dense tea cake that is simple to make. It gets better with age; if possible leave for 3 to 4 days before cutting and eating.

Ingredients

Serves: 6
  • 250ml milk
  • 85g golden syrup
  • 85g margarine
  • 170g sultanas
  • 280g self raising flour
  • 1 1/2 teaspoons bicarbonate of soda
  • 110g sugar
  • 1 pinch salt, to taste

Preparation method

Prep: 10 minutes | Cook: 1 hour 15 minutes
1.
Melt together milk, syrup, margarine and sultanas. Mix with flour, bicarbonate of soda, sugar and salt.
2.
Place in a loaf tin. Bake for 1 1/4 hours at 150 degrees C.
3.
Leave 3-4 days before cutting. It can be wrapped in foil.
