An easy custard tart with instructions to make the pastry; or you could short cut and buy one pre-made. You can exchange the nutmeg for other spices or flavours like vanilla or mixed spice.


Serves: 8 

  • 150g plain flour
  • 30g caster sugar
  • 130g butter, cubed
  • 1 tablespoon water
  • 3 eggs
  • 150ml cream
  • 150ml milk
  • 1 teaspoon nutmeg, optional
  • punnet strawberries, optional

  1. To make the pastry. Place the flour and sugar in a large bowl and rub in the butter with your finger tips until the mixture resembles breadcrumbs.
  2. Add water and mix together to form a soft dough. Wrap in plastic wrap and leave to chill in the refrigerator for 30 minutes.
  3. Roll out the dough on a lightly floured work surface to form a round, slightly larger than 24cm springform pan then use to line the pan. Prick the dough with a fork and leave to chill for 30 minutes.
  4. Preheat the oven to 190 degrees C. Line the pastry shell with foil and baking beans and then bake in the preheated oven for 15 minutes.
  5. Remove foil and beans and bake for another 15 minutes.
  6. To make the filling. Whisk the eggs, cream, milk and nutmeg together. Pour the filling into the pastry case.
  7. Return the tart to the oven and cook for 25-30 minutes until set. Serve hot or cold with strawberries.
