Cucumber and Tomato Salad

    This is a quick recipe which can be made with basic ingredients found in our kitchen. It is tasty, nutritious as well as healthy.

    Serves: 2 

    • 2 tablespoons olive oil
    • 2 teaspoons balsamic vinegar
    • 1 clove garlic, grated
    • 1 large cucumber, cut into chunks
    • 2 ripe medium plum tomatoes, cut into chunks
    • 6 - 10 black olives, diced
    • 6 - 8 leaves of fresh basil, finely diecd
    • 1 pinch sea salt and black pepper, to taste

    1. In a bowl, add the olive oil, balsamic vinegar and grated garlic. Mix it well and keep aside covered for couple of minutes.
    2. In a big bowl add the cucumber, tomatoes, olives, basil leaves, sea salt and black pepper. Mix well.
    3. Pour the olive oil and balsamic vinegar dressing to it and mix well. Serve.

    Make it healthier

    You can add diced onion, green capsicum or left over boiled pieces of chicken breast.
