Chorizo and Mushrooms in a Creamy Sauce

    This is a simple recipe; you can cook for your family in no time. The Vhorizo and mushrooms are accompanied by green beans in a garlic cream sauce.

    Serves: 1 

    • 1 teaspoon olive oil
    • 1 clove garlic, crushed
    • 150g fresh Chorizo, diced
    • 5 baby mushrooms, diced
    • 60g of green beans
    • 2 tablespoons of fresh cream
    • 120g penne pasta, cooked in vegetable or chicken stock
    • 1 pinch salt and pepper, to taste
    • 1 spring onion, diced

    1. Heat oil in a frying pan and cook garlic for 30 seconds until golden brown. Add chorizo and cook until nearly done then add the mushrooms and beans then saute for a few minutes.
    2. Add cream and reduce slightly. Add cooked pasta and cook until heated through. Add salt, pepper and spring onion. Serve.

    Made it healthier. Swap cream for creme fraiche - this works with most pasta recipies such as carbonara for a lighter but still tasty version  -  15 Jan 2009  (Review from Allrecipes UK & Ireland)
