Chicken and Broccoli Bake

    This chicken and broccoli bake is in a creamy mushroom sauce. By careful choice of ingredients, leaning towards light products it is very low fat.

    Serves: 3 

    • 225g broccoli florets
    • 4 skinned chicken breast portions
    • 1 (400g) tin low fat condensed chicken soup
    • 50g light mayonnaise
    • 1 teaspoon curry paste
    • 30ml lite milk

    Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Cook broccoli in boiling water until almost tender.
    2. Place chicken breasts and broccoli in a shallow oven proof dish.
    3. Mix together the soup, mayonnaise, curry paste and milk.
    4. Spoon the mixture over the chicken and broccoli coating them well.
    5. Bake at 190 degrees C for 45 minutes or until bubbling all the way through.

    Was nice, I didnt have any curry paste so i added Garam Masala - wont do that again! Will try tarragon and skipping the curry paste next time, I reckon that will be a good result.
