Meat and Vegetable Slow Cooker Stew

I started making this when I had long hours at work, it's full of goodness and is ready when I get home. I can just dish it up and rest!


Serves: 4 

  • 1 joint of meat, beef, pork or chicken
  • 1 tablespoon of stock
  • 500ml water
  • 60g mung beans
  • 60g adzuki beans, or kidney beans
  • 1 packet soup mix
  • 1/2 butternut squash, peeled and cubed
  • 6 carrots, cubed
  • 1/2 swede, peeled and cubed
  • 5 washed potatoes, cubed
  • 2 teaspoon chicken stock powder

Preparation:10min  ›  Cook:6hours  ›  Ready in:6hours10min 

  1. Place all the ingredients in a slow cooker on low and leave all day to cook.
  2. Take out the meat when ready and slice; it will fall apart and dish the rest up. If there are too many vegetables I freeze the leftovers.
