Easy Cinnamon Cupcakes

These cupcakes are different in that they use cinnamon as the flavour and not vanilla. They are delicious and easy.


Serves: 12 

  • 110g margarine, room temperature
  • 110g caster sugar
  • 2 medium eggs
  • 110g self raising flour
  • 1 pinch ground cinnamon, to taste

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Heat oven to 180 degrees C.
  2. Using an electric mixer with a whisk beat margarine and sugar until light and fluffy.
  3. Break the eggs into a cup making sure no shell has gone into the cup.
  4. Beat the egg into the sugar and margarine until smooth and well incorporated.
  5. Slowly at first beat in all the flour and cinnamon; increase speed once they have incorporated. Mix until mixture is light and fluffy.
  6. Prepare 12 hole cupcake tray with patty cups. Bake in oven for 20 minutes or until risen and firm to the touch.

With my recipe I didn't use the electric beater instead I used a whisk to bind everything together.Second time round i deiced to put oats in it looks and smells amazing and add a pinch of sugar onto the top - 17 Apr 2016
