Chocolate Hedgehog

    This is a rich chocolate slice with biscuit crumbs and raisins. Golden syrup plays a big factor in the taste and it is all topped off with chocolate.

    Serves: 20 

    • 110g butter
    • 2 tablespoons sugar
    • 2 tablespoons golden syrup
    • 4 teaspoons cocoa
    • 250g plain biscuits, crushed
    • 45g of raisins
    • 400g cooking chocolate, half milk and half dark

    Preparation:10min  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. In a saucepan, melt the butter, sugar, syrup and cocoa.
    2. Add the biscuits and raisins when melted. Stir to combine.
    3. Pour mixture into a 20x30cm Swiss roll baking tray and press down. Melt the cooking chocolate and pour over the mixture in the tray.
    4. Place the tin into the fridge and leave for about 1 hour to set. To serve, cut into about 20 pieces.


    The recipe can be made in a smaller tray (20cm square) for a thicker base, and that one can then use less chocolate for the topping.

    This was amazing, but what made it even better was double the amount of golden syrup and 6tsp cocoa. I used Ginger nuts instead of rich tea/digestives and threw in some fresh chopped ginger (about a thumb sized piece) I only used dark chocolate on the top.
