Double Cream Chocolate Mousse

This is a simple but rich creamy chocolate mousse. I like to save it for special occasions and decorate it with chocolate swirls.

Ingredients
Serves: 6
- 295g of your favourite chocolate
- 6 tablespoons boiling water
- 275ml double cream
- 2 egg whites

- Place the chocolate and the boiling water in a heatproof bowl suspended over a saucepan of barely simmering water.
- Allow the chocolate to melt slowly. Remove from heat then cool until it thickens and then fold in the double cream.
- Whisk the egg whites until stiff peaks form and fold into the mixture.
- Chill in the fridge for at least 6 hours.
