Double Cream Chocolate Mousse

This is a simple but rich creamy chocolate mousse. I like to save it for special occasions and decorate it with chocolate swirls.


Serves: 6 

  • 295g of your favourite chocolate
  • 6 tablespoons boiling water
  • 275ml double cream
  • 2 egg whites

  1. Place the chocolate and the boiling water in a heatproof bowl suspended over a saucepan of barely simmering water.
  2. Allow the chocolate to melt slowly. Remove from heat then cool until it thickens and then fold in the double cream.
  3. Whisk the egg whites until stiff peaks form and fold into the mixture.
  4. Chill in the fridge for at least 6 hours.
