    These are a fudgy, chocolaty and satisfying chocolate slice with the added bonus of being gluten free. Great for the lunch box or picnic bag.

    Serves: 10 

    • 250g butter
    • 110g cooking chocolate
    • 400g caster sugar
    • 4 eggs, separated
    • 1 teaspoon vanilla essence
    • 200 to 250g gluten free flour
    • 100g chocolate chips, more if desired

    1. Preheat oven to 160 degrees C.
    2. Melt butter and cooking chocolate over medium heat and whisk until smooth.
    3. Remove from heat and combine with sugar.
    4. Add egg yolks and vanilla. Mix well.
    5. Add flour until mixture is very thick.
    6. Add chocolate chips and mix well.
    7. Whisk egg whites until stiff and peaked then fold into the mixture.
    8. Spread in a greased 25x38cm baking tin. Bake 25-30 minutes.
    9. Remove from oven and cool. Allow to cool in fridge for at least 2 hours for optimum enjoyment.
