Chocolate and Ginger Biscuits

    A quick easy to make, delicious tasting biscuit. These are my favourites to dunk into tea or coffee, I always bake a batch when the girls are coming over.

    Ingredients
    Serves: 15 

    • 115g unsalted butter
    • 50g white sugar
    • 70g soft light brown sugar
    • 1/2 teaspoon vanilla essence
    • 1 large egg
    • 70g (70%+) dark chocolate
    • 65g crystallised ginger, finely diced
    • 160g plain flour
    • 1/4 teaspoon bicarbonate of soda
    • 1 pinch salt, to taste

    Directions
    Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

    1. Preheat oven to 180 degrees C, grease 2 baking trays.
    2. Cream together butter and sugars until combined. Beat in the vanilla and the egg.
    3. Melt the chocolate in the microwave gently until smooth and runny and stir into the mixture then add the diced ginger.
    4. Mix together the flour, bicarbonate of soda and a pinch of salt and combine with the other ingredients until just mixed.
    5. Place heaped tablespoons onto baking tray well spaced and bake in oven for 10 minutes. When cooked let sit for a couple of minutes on tray then move to a wire cake rack.

    Quite disappointed in the texture, it was more like cake than biscuit or cookie. Also, not sure about the measurements. For instance could hardly taste the ginger crystals. Sorry to be so negative.  -  27 Apr 2014  (Review from Allrecipes UK & Ireland)
