White Wine Chicken

This white wine chicken is nice and light tasting but also has lots of flavour. It can be served with rice or sauteed potatoes and a green vegetable.


Serves: 2 

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts, cut into small pieces
  • 4 cloves garlic, finely diced
  • 1/2 unwaxed lemon, 3 strips of peel and juice
  • 100ml dry white wine
  • 2 tablespoons fresh flat leaf parsley, diced
  • 1 pinch sea salt and fresh ground black pepper, to taste
  • 1/2 teaspoon sugar

  1. Use a large frying pan for this dish. Add the oil to the pan on a medium heat. When the oil is hot add the chicken pieces. Fry for approximately 5 minutes turning regularly.
  2. Add the garlic, the strips of lemon peel and the lemon juice. Turn the heat down to low and cook for about 10 minutes.
  3. Add the white wine, parsley, salt, pepper and sugar to the pan and cook for a further 10-15 minutes, until the sauce has reduced a little. The sauce should not be too thin but also should not be think. If it does get a little thick add a drop more wine.
