    This white wine chicken is nice and light tasting but also has lots of flavour. It can be served with rice or sauteed potatoes and a green vegetable.

    Ingredients
    Serves: 2 

    • 2 tablespoons olive oil
    • 4 boneless, skinless chicken breasts, cut into small pieces
    • 4 cloves garlic, finely diced
    • 1/2 unwaxed lemon, 3 strips of peel and juice
    • 100ml dry white wine
    • 2 tablespoons fresh flat leaf parsley, diced
    • 1 pinch sea salt and fresh ground black pepper, to taste
    • 1/2 teaspoon sugar

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Use a large frying pan for this dish. Add the oil to the pan on a medium heat. When the oil is hot add the chicken pieces. Fry for approximately 5 minutes turning regularly.
    2. Add the garlic, the strips of lemon peel and the lemon juice. Turn the heat down to low and cook for about 10 minutes.
    3. Add the white wine, parsley, salt, pepper and sugar to the pan and cook for a further 10-15 minutes, until the sauce has reduced a little. The sauce should not be too thin but also should not be think. If it does get a little thick add a drop more wine.

    This dish is easy, quick and very tasty! It's a great alternative to a cooked chicken dinner as it's very light and a healthy dish. Great for all the family, especially my 4 year old daughter who loves the chicken! I can't wait to make this dish again and i'm also going to try other variations with lime or orange.     I didn't have parsley so used dried oregano, loved the flavour but half a glass of wine wasn't enough liquid (size of wine glass?) so could you add in ml please. I will make I again just with a lot more wine.  -  24 Feb 2016  (Review from Allrecipes UK & Ireland)

    Used different ingredients. I used honey instead of sugar, i didn't add chives, halved the amount of wine and also added mushrooms. I then served it with new potatoes roasted with salt, black pepper and paprika, and a salad!  -  18 May 2011  (Review from Allrecipes UK & Ireland)
