Bacon Wrapped Mozzarella and Chicken

A chicken breast with a layer of mozzarella cheese wrapped in smoked bacon is baked in the oven until the chicken is cooked and the cheese gooey.


Serves: 1 

  • 1 chicken breast
  • 4 rashers smoked bacon
  • 75g mozzarella cheese
  • 1 clove garlic, crushed
  • 1/2 onion, peeled and quartered
  • 1 tablespoon chives, diced

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 190 degrees C.
  2. Lay down enough rashers of bacon to cover the length of the chicken breast. Make sure they overlap by about 2 to 3cm.
  3. Place the chicken breast across the rashers of bacon about 8cm from the top.
  4. Place sliced mozzerella on top of the chicken breast and wrap the bacon around to create a parcel.
  5. Place the garlic and onion into a glass ovenproof dish.
  6. Place the chicken on top of the onion and garlic then sprinkle the chives on top of the chicken.
  7. Place in oven and cook for 30 minutes.
