    Baked chicken Maryland is a succulent chicken breast coated in breadcrumbs and served with a rich cream and capsicum sauce.

    Ingredients
    Serves: 4 

    • Chicken
    • 1 1/2 kg chicken breast fillets
    • 4 tablespoons plain flour
    • 1 pinch salt and black pepper, to taste
    • 1 egg
    • 1 tablespoon paprika
    • 100g breadcrumbs
    • Sauce
    • 30g margarine
    • 1/2 capsicum, any colour, diced
    • 3-4 tablespoons flour
    • 300ml cream

    Directions

    1. Chicken: Mix together the salt, pepper, flour and paprika and coat the chicken with this mixture. Dip the coated chicken pieces in the egg and cover with the breadcrumbs.
    2. Grease a baking tray and place the chicken on the tray. Place in a preheated oven at 180 degrees C until cooked thoroughly; about 20 minutes; cut the chicken in half to check.
    3. Sauce: Melt the margarine in a large saucepan then add the diced capsicum and cook for 3-4 minutes.
    4. Stir in the flour and remove from the heat. Gradually stir in the cream and seasoning.
    5. Return to the heat and cook until thickened, stirring continuously but do not allow the sauce to boil.
    6. Serve the chicken and sauce with boiled rice.

    Chicken Maryland? Chicken Maryland is the thigh and leg not breast of chicken! Maybe you should have called it crumbed chicken breast. - 04 Mar 2015

    don't worry about the debate on what this dish should be called, this is a nice, easy and tasty recipe. just a couple of comments .... i suggest you change the instruction in the sauce preparation to state "3/4 of a tablespoon of flour" and not "3-4 tablespoons" .... could lead to a very binding sauce!! also in the sauce section, you state "add seasoning" when adding the cream. i presumed that to mean salt and pepper. i found the sauce "missing something" in its taste ...... did i miss something in my interpretation of "seasoning"? i also suggest 30 minutes for baking chicken .... just to be sure of thoroughness of bake!! - 02 Dec 2015

    Above reviewer is correct, Chicken Maryland by definition uses chicken thighs, NOT breasts. It would be more appropriate to name this 'Crumbed chicken breasts'. - 22 Mar 2014
