    This creamy chicken is simple to prepare and tastes even better the next day. I love the mushrooms and chunks of chicken.

    Serves: 5 

    • 1 medium cooked roast chicken
    • 1 onion, diced
    • 400g button mushrooms, sliced
    • 3 cloves garlic, crushed
    • 3 tablespoons butter, softened
    • 2 tablespoons plain flour
    • 1 (400g) tin cream of mushroom soup
    • 130ml chicken stock
    • 160ml double cream, optional
    • 1 pinch salt and pepper, to taste

    1. Preheat oven to 160 degrees C.
    2. Cut up roasted chicken removing skin and bones; add to ovenproof dish.
    3. In a large saucepan brown onion, mushrooms and garlic in 1 tablespoon butter. Add to chicken. Season to taste.
    4. Add 2 tablespoons butter to saucepan and add flour to form a roux.
    5. Add chicken stock to roux and cook over low heat for a couple of minutes stirring constantly.
    6. Add cream of mushroom soup to chicken stock, stir and allow to simmer.
    7. Pour sauce over chicken mixture and stir ensuring all ingredients are combined.
    8. Bake in the oven for 1 hour.
    9. Stir in cream before serving for a creamier sauce.
