Jasmine Fruit Cake

    My grandmother always makes this cake for Christmas. It is a lot lighter than the traditional Christmas fruitcakes. I like the flowery and the fruity flavour.

    Serves: 6 

    • 1 cup (250ml) strong Jasmine flower tea
    • 50g dried cranberries
    • 50g Goji berries, if available
    • 50g glace cherries
    • 50g raisins or sultanas
    • 25g glace peel
    • 180g butter
    • 175g caster sugar
    • 3 eggs, whisked
    • 2 cups (250g) self raising flour
    • 1 lemon, zested
    • 1 teaspoon mixed spice
    • 1 teaspoon rose water

    1. Soak the fruits in the Jasmine tea.
    2. Cream butter and sugar together.
    3. Add whisked eggs. Then add in the berries and Jasmine tea liqueur.
    4. Fold in the flour, spice, lemon zest and rose water.
    5. Line a loaf tin with greaseproof paper. Grease well. Spoon the cake mixture into a prepared tin.
    6. Bake in the centre of the oven at 180 degrees C for 50 minutes.
    7. Cool on a wire rack. Decorate the cake with icing sugar.
