Bacon and Pasta Bake

    Who needs mince to make a great pasta bake? The bacon provides the meat, great taste, salt and that magic that only bacon can provide.

    Serves: 4 

    • 500g pasta
    • 1 tablespoon sunflower oil
    • 1 onion, finely diced
    • 4 rashers unsmoked bacon, diced
    • 1 (400g) tin tomato soup
    • 1 tablespoon tomato paste
    • 1 tablespoon garlic puree
    • 1 pinch salt and pepper, to taste
    • 60g cheddar, grated
    • 1 tablespoons parmesan, grated

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 180 degrees C.
    2. Bring a large saucepan of water to the boil and cook the pasta for 12 minutes; then drain.
    3. Meanwhile heat the oil in a large saucepan and add the onions and bacon, cook for 5 minutes or until onions have softened and the bacon is cooked.
    4. Add the tomato soup, tomato paste, garlic puree and seasoning then stir.
    5. Add the cooked pasta into the sauce and give it a good stir to coat.
    6. Put the pasta mixture into an ovenproof dish and then top with the mixed cheddar and parmesan.
    7. Bake in a preheated oven for 10 minutes until the cheese has melted.
