Coconut Milk Chicken Curry
A lovely chicken curry that my nan makes for special birthdays. She always has to serve seconds because we all gobble it up and want more.

1 tablespoon oil
1 medium onion, diced
3 gloves garlic, crushed
5 medium chicken pieces
250ml coconut milk
2 medium potatoes, quartered
2.5cm piece fresh ginger, diced
1 green capsicum, diced
2 tablespoons curry powder, to taste
1 pinch salt and pepper, to taste
fish sauce, optional

Saute onion and garlic in oil in a saucepan for about 2 minutes.
Add chicken. Cook for about 5-10 minutes, turning chicken over occasionally to cook evenly.
Pour in coconut milk. Add potatoes, ginger and green capsicum. Stir for 3 minutes.
Mix in the curry powder. Bring to the boil. Lower heat then simmer for about 5 minutes more or until all ingredients are cooked.
Add salt and pepper to taste. The fish sauce can be added for more flavour. Serve.

Really great (and easy)! I used a bit more coconut milk because it didn't seem like the allotted amount would be enough, and then added some more garlic to taste. Absolutely delicious!
