A lovely chicken curry that my nan makes for special birthdays. She always has to serve seconds because we all gobble it up and want more.


Serves: 2 

  • 1 tablespoon oil
  • 1 medium onion, diced
  • 3 gloves garlic, crushed
  • 5 medium chicken pieces
  • 250ml coconut milk
  • 2 medium potatoes, quartered
  • 2.5cm piece fresh ginger, diced
  • 1 green capsicum, diced
  • 2 tablespoons curry powder, to taste
  • 1 pinch salt and pepper, to taste
  • fish sauce, optional

Preparation:15min  ›  Cook:30min  ›  Extra time:45min  ›  Ready in:1hour30min 

  1. Saute onion and garlic in oil in a saucepan for about 2 minutes.
  2. Add chicken. Cook for about 5-10 minutes, turning chicken over occasionally to cook evenly.
  3. Pour in coconut milk. Add potatoes, ginger and green capsicum. Stir for 3 minutes.
  4. Mix in the curry powder. Bring to the boil. Lower heat then simmer for about 5 minutes more or until all ingredients are cooked.
  5. Add salt and pepper to taste. The fish sauce can be added for more flavour. Serve.
