Corned Beef Bake

    This is a healthy and easy dinner with a lot of vegetables and corned beef. No need for spices the corned beef already has them.

    Serves: 4 

    • 2 large potatoes, sliced really thin
    • 2 carrots, sliced really thin
    • 2 parsnips, sliced really thin
    • 1 leek, diced
    • 450ml beef stock
    • 1 tin corned beef, sliced

    Preparation:20min  ›  Cook:1hour30min  ›  Ready in:1hour50min 

    1. Preheat oven to 190 degrees C.
    2. In an oven proof casserole dish layer potatoes, carrots, parsnips, leaks and corn beef finishing off with a layer of potatoes on the top.
    3. Pour over the stock then cover and bake in the preheated oven for 1 hour 30 minutes.

    I halved the recipe as it was just a meal for myself, and only used carrots and potatoes as they were all I had in the house.     Yummy and so easy! I don't use gravy granules so I used a little cornflour to thicken the gravy and it was perfect. I might try swede in place of parsnip next time as the parsnip does make it quite sweet.
