    This is a healthy and easy dinner with a lot of vegetables and corned beef. No need for spices the corned beef already has them.

    Serves: 4 

    • 2 large potatoes, sliced really thin
    • 2 carrots, sliced really thin
    • 2 parsnips, sliced really thin
    • 1 leek, diced
    • 450ml beef stock
    • 1 tin corned beef, sliced

    1. Preheat oven to 190 degrees C.
    2. In an oven proof casserole dish layer potatoes, carrots, parsnips, leaks and corn beef finishing off with a layer of potatoes on the top.
    3. Pour over the stock then cover and bake in the preheated oven for 1 hour 30 minutes.
