Sometimes you just need a new spin on an old favourite. This is a slightly different way to do mashed potatoes including spring onions.


Serves: 6 

  • 10 medium floury potatoes, peeled and quartered
  • 1 cup (250ml) milk
  • 1 bunch of spring onions, finely diced
  • 1 pinch salt and pepper, to taste

  1. Put the potatoes in a large saucepan and cover with water. Place over high heat; bring to the boil and cook until soft.
  2. Meanwhile, in a small saucepan heat the milk over medium heat. Add the diced spring onion and simmer until the potatoes are done.
  3. Drain the potatoes and add the milk mixture along with salt and pepper. Mash together until fluffy and smooth. Serve with butter, if desired.
