Chorizo and Lentil Casserole

There is nothing like a kids meal of sausage casserole, this one has the added bonus of Chorizo sausage as well as the normal sort.


Serves: 4 

  • 4 large baking potatoes
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 6 sausages
  • 150g chorizo sausages, sliced or diced
  • 1 large carrot, diced
  • 2 (400g) tins kidney beans
  • 1 (400g) tin lentils, Puy lentils if available (ready cooked)

  1. Preheat the oven to 180 degrees C.
  2. Peel and halve the potatoes then put them on to boil for 20 minutes. When cooked mash them and set aside.
  3. Heat the oil in a large, heavy bottomed frypan and gently fry the onions for about 10 minutes until they begin to colour. Set aside.
  4. Add the sausages and fry turning often until cooked. This will take about 10-15 minutes. Remove from the pan, cut into bite sized pieces and set aside.
  5. Add the chorizo and carrot to the frypan and cook for 3 or 4 minutes; until the chorizo begins to release its oil.
  6. Return the sausages and onions to the pan with the chorizo and carrot then add the beans and lentils. Stir well to combine then bring to the boil. The beans should have enough sauce to allow this.
  7. Transfer everything to a large casserole dish and then spoon over the mashed potatoes. Spread over the surface of the casserole dish to cover and then put in the oven for 25 minutes or until the poatato begins to brown. Serve.

When I read this recipe, I thought it was an excellent idea. However, I added a great many more veggies - I chopped up two zucchini into small cubes, added in mushrooms and spinach as well as tomatoes. My boys gobbled up their dinner and I was a happy mama - 07 Aug 2011
