These easy peasy desserts use fresh fruit and shop bought ingredients to make a remarkably delicious summer treat.


Serves: 4 

  • 300g fresh blueberries
  • 200ml thickened cream, whipped
  • 8 tablespoons lemon curd
  • 10 gingernuts, crushed
  • 1 bunch fresh mint leaves, to garnish

Preparation:10min  ›  Ready in:10min 

  1. In four glasses layer first with a small bit of cream, then lemon curd, then the crushed ginger nuts, then blueberries. Repeat; ending with a layer of blueberries.
  2. Garnish with fresh mint leaves. I prefer this after having it chill in the fridge for at least an hour.
