Bacon, Lettuce and Tomato Wrap

    A wrap version of the sandwich that my kids seem to like better. Sliced avocado is a nice addition. You can use other flat breads like pita and mountain instead of the tortillas if desired.

    Serves: 4 

    • 400g bacon rashers, sliced into 3cm pieces
    • 4 flour tortillas
    • 2 tablespoons mayonnaise or salad cream, to taste
    • 1/2 cos lettuce, shredded
    • 1 tomato, diced

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Place bacon in a large, deep frying pan. Cook over medium-high heat until evenly brown. Drain and set aside.
    2. Microwave the tortillas for a few seconds just enough to soften them up and make them pliable without cracking.
    3. Immediately spread each tortilla with mayonnaise, 1/4 of the bacon, lettuce and tomato. Fold sides of tortilla over then roll up.
    4. Repeat with remaining ingredients. Cut each wrap in half before serving.

    Lovely and handy when one is really busy but still want to prepare something tasty and nourishing for hungry humans returning from a day's work. The Avocado addition is excellent, but I made a mash or puree instead of slices, and pasted the mixture onto the warm tortilla wraps before I added the cooked BLT.
