Creamy Summer Strawberry Sweet Soup

    Make the most of this wonderful berry while it's in season. Strawberries and natural yoghurt are puréed with sugar, orange juice and ground cardamom in this recipe for a refreshing and unique chilled summer dessert-soup.

    Serves: 5 

    • 750g strawberries
    • 2 cups natural yoghurt
    • 1/2 cup orange juice
    • 1/2 cup caster sugar
    • 1/2 cup water
    • 1/8 teaspoon ground cardamom

    1. In a blender, combine the strawberries, yoghurt, orange juice, sugar, water and cardamom. Purée until well mixed. Chill and serve.

    This would be a 10 star. I make 1-2 times a week, everyone loves it. I do not use any water, use ginger instead of cardamom, and use vanilla yogurt (yoplait is what we like).
