Rich Bolognese Sauce

Rich and saucy; packed with vegetables like capsicum and carrots. Best served with spaghetti and freshly grated Parmesan cheese.


Serves: 6 

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 800g lean beef mince
  • 1/2 glass red wine
  • 1 teaspoon dried basil
  • 2 (400g) tins diced tomatoes
  • 3 tablespoons tomato paste
  • 1 beef stock cube
  • 4 bay leaves
  • 3 cloves garlic, crushed
  • 3 large strips of lemon rind (cut from unwaxed lemon with a knife)
  • 1 pinch chilli flakes, to taste
  • 1 green capsicum, diced
  • 1 large carrot, diced

  1. Heat olive oil in a large saucepan over a medium heat. Add onion and brown.
  2. Add basil and tinned tomatoes then stir.
  3. Cover and leave on a low heat for at least 1/2 an hour; stirring occasionally. The longer you can leave it to simmer the more flavour it will have.
  4. Add beef and mix thoroughly until cooked through.
  5. Pour wine into the mixture and stir through.
  6. Add the tomato paste, stock cube, bay leaves, garlic, lemon rind, chilli flakes, capsicum and carrot; stir again.
