Zucchini and Sun Dried Tomato Dip

    A simple dip with healthy vegetables including zucchini, sun dried tomatoes and tahini. Seasoned with a great spice combination including garlic, paprika and chilli.

    Serves: 250 

    • 1 medium zucchini
    • 40g dried sun-dried tomatoes, rehydrated
    • 60g tahini
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • 1 tablespoon diced fresh or dried parsley
    • 1 clove garlic, crushed
    • 1 tablespoons paprika, to taste
    • 1 pinch salt and pepper, to taste
    • 1 pinch chilli flakes, to taste

    1. In the bowl of a food processor place the zucchini, sun-dried tomatoes, tahini, lemon juice, olive oil, parsley, garlic and paprika. Blends until relatively smooth and well combined; scraping down the bowl when necessary.
    2. Season to taste with salt, pepper and chilli flakes, blend again until well combined.
    3. Allow to sit for a few hours in the refrigerator to develop the flavours. Serve with pita bread, vegetable sticks and/or crackers.
