    This is a very simple way to cook your chicken to get something a little different. Serve with your favourite stir fried vegetables and/or rice.

    Serves: 2 

    • 1 lime, juiced and zested
    • 20 basil leaves, finely diced
    • 2 breast fillets of chicken
    • 150ml creme fraiche
    • 1/2 tablespoon flour

    1. In a bowl stir lime zest, 1/2 lime juice and basil into a paste.
    2. In a fry pan with some olive oil cook the chicken until no longer pink in the centre.
    3. Add the creme fraiche to the fry pan and allow to simmer for 5 minutes then add the lime and basil paste.
    4. Add flour to thicken stirring well. When thick serve.
