Have a great start to your day with this easy to cook omelette. It is very filling with mushrooms, tomatoes and onion accompanying the meats.


Serves: 1 

  • 3 tablespoons oil for frying, divided
  • 2 rashers of bacon
  • 1 sausage of choice
  • 3 closed button mushrooms, sliced
  • 1 large tomato, sliced
  • 2 spring onions, sliced (optional)
  • 3 eggs
  • 1 dash tobasco sauce, to taste
  • 1 pinch salt and pepper, to taste

  1. In a large frypan heat 1 tablespoon of oil and fry the bacon, sausage, sliced mushrooms, tomatoes and onions.
  2. Whisk eggs in a bowl with a dash of tobasco sauce, salt and pepper.
  3. Dice the cooked bacon and sausage; reserve.
  4. Add the remaining oil to the frypan and increase the heat then pour the egg mixture in; stirring until the egg sets then turnover to brown both sides.
  5. Add the bacon, sausage, mushrooms, tomatoes and onion on top. Serve
