Barbecued Fruit Salad

    If you're having a barbecue this is a simple dessert works with most fruit. You just cook them altogether in an alfoil parcel. I have used peaches, halved plumbs, apples, pears; whatever you have on hand.

    Serves: 4 

    • 500g sliced fruit, such as plums, peaches, apricots, pineapple etc
    • 4 to 6 tablespoons honey
    • 1 1/2 tablespoons cinnamon
    • 1 pinch nutmeg, to taste
    • 1 container double cream or vanilla ice cream

    1. Preheat a barbecue for medium heat.
    2. Place fruit slices onto a large piece of aluminium foil. Drizzle the honey over the fruit and sprinkle with cinnamon and nutmeg. Close up the foil sealing tightly.
    3. Place the foil parcel onto the preheated barbecue and cook for 10 minutes; turning once halfway through.
    4. Carefully open the parcel and serve with dollops of cream or scoops of vanilla ice cream.


    Depending on the fruit used there are different herb and spice combinations. Pineapple is quite lovely with some diced fresh mint and lemon juice, in place of the cinnamon and nutmeg. Or a few sloshes of cognac with some plums.
